If there is one French confectionery product whose quality remains unsurpassed and whose renown is worldwide, it is undoubtedly the Dragée, whose origins are very ancient. This classic candy, evocative of old and noble traditions jealously preserved over the centuries, is increasingly widespread today. It was around the year 1220 that an apothecary from Verdun had a brilliant idea. He took almonds, which he used to make his cakes, coated them with a layer of sugar and honey, and then, to facilitate their transport, hardened them. The Dragée was invented and was called an spice. This product soon became fashionable among the nobility, and the dragée box became de rigueur for ladies. These spices, which remained in the form of pralines until around the year 1600, then took on their current form: a hard but smooth shell retaining the shape of the fruit.
