Du baba au rhum aux madeleines, ce fin gourmet \u00e0 la silhouette g\u00e9n\u00e9reuse a permis l\u2019\u00e9criture des belles heures de la p\u00e2tisserie. Mais au-del\u00e0 de cette image d\u2019Epinal, le XVIIIe si\u00e8cle est une p\u00e9riode de r\u00e9volution culinaire o\u00f9 se d\u00e9finit un go\u00fbt nouveau. Franz<\/figcaption><\/figure>\n<p>Pionni\u00e8re dans une mode appel\u00e9e \u00e0 se r\u00e9pandre dans l\u2019aristocratie, la duchesse Elisabeth-Charlotte (1676-1744), \u00e9pouse du duc L\u00e9opold de Lorraine, innove d\u00e8s le d\u00e9but du XVIIIe si\u00e8cle en passant derri\u00e8re les fourneaux. Cette pratique culinaire, v\u00e9cue comme un loisir, est \u00e0 mettre en rapport avec le go\u00fbt naissant pour les repas de plein air, qui temp\u00e8rent le formalisme traditionnel des rituels de table toujours en vigueur \u00e0 la cour. C\u2019est \u00e9galement le souci du confort qui justifie la cr\u00e9ation \u00e0 Lun\u00e9ville de l\u2019une des premi\u00e8res \u00ab\u00a0tables volantes\u00a0\u00bb connues en Europe. Franz<\/figcaption><\/figure>\n<p>L\u2019exposition fournit l\u2019occasion de percer les\u00a0secrets de cette ing\u00e9nieuse invention, qui faisait appara\u00eetre les plats comme par enchantement\u2026 Stanislas Leszczynski, ancien roi de Pologne devenu duc de Lorraine en 1737, ajoute sa note de fantaisie en donnant aux repas de f\u00eate une extravagance in\u00e9gal\u00e9e. Avec ce souverain fantasque, collations et desserts poussent la sophistication jusqu\u2019\u00e0 faire ressembler les tables \u00e0 des jardins \u00e0 la fran\u00e7aise, orn\u00e9s de jets d\u2019eau et de fleurs en sucre, peupl\u00e9s d\u2019un cort\u00e8ge de statuettes en fa\u00efence. L\u2019esprit d\u2019innovation qui anime les artisans leur permet de satisfaire des besoins nouveaux en mati\u00e8re d\u2019arts de la table, alliant esth\u00e9tique et utilit\u00e9. C\u2019est ce que d\u00e9montrent les pi\u00e8ces rares issues des collections du mus\u00e9e, expos\u00e9es ici pour la premi\u00e8re fois.<\/p>\n<p><strong>Des saveurs riches, entre terroir et envies d\u2019ailleurs<\/strong><\/p>\n<p>La lecture des livres du duc L\u00e9opold de Lorraine nous r\u00e9v\u00e8le la richesse et la vari\u00e9t\u00e9 des produits consomm\u00e9s \u00e0 la cour. Les fruits de mer proviennent de la mer du Nord et de la Manche, tandis que les olives, les agrumes et le parmesan arrivent directement de M\u00e9diterran\u00e9e. Jambons de Westphalie ou de Mayence font la route depuis l\u2019Allemagne. Quant aux truffes, avant d\u2019\u00e9voquer le sud-ouest de la France, il faut se souvenir que la Lorraine \u00e9tait alors une terre de production. Dans ce ch\u00e2teau de l\u2019ombre r\u00e8gne une vie intense, de la r\u00f4tisserie \u00e0 la paneterie en passant par l\u2019office du \u00ab\u00a0fruit\u00a0\u00bb d\u00e9di\u00e9 aux desserts. Ceux-ci sont \u00e9labor\u00e9s par l\u2019un des chefs d\u2019office de Stanislas, Joseph Gilliers, qui a compil\u00e9 ses recettes dans son Cannam\u00e9liste fran\u00e7ais, l\u2019un des ouvrages les plus pr\u00e9cieux de l\u2019histoire de la p\u00e2tisserie et de la confiserie en France.
